Kuih Kodok Recipe (Mashed banana fritters)

Kuih Kodok (Mashed Banana Fritters), a.k.a. Toad Cakes is a simple Malaysian dessert using only 5 ingredients to make it appear right in front of you!
P.s. It is a good way to use up all those over-ripen bananas:)
Now let's dive right into the ingredients and steps to make this delicious dessert.
TOOLS AND INGREDIENTS REQUIRED:
Tools:
- French Whip 8-inch
- Skimmer 6″ diameter
Ingredients:
- ½ cup all-purpose flour (75g)
- 1 tsp baking powder
- 1 large egg
- 3 ripe bananas (mashed) (15oz/420g)
- Vegetable oil for deep frying
STEP-BY-STEP COOKING INSTRUCTIONS:
- Combine all-purpose flour, baking powder, egg, and ¼ cup (60ml) water in a large bowl. Mix till a smooth batter forms.
- Stir in mashed bananas. Cover and set aside for 15 minutes.
- In a medium sized saucepan, heat about 1 inch deep oil. Gently lower a ladleful batter into hot oil. Fry until golden brown, turning once.
It only takes about 2-3minutes. Two or three pieces may be fried at the same time but do not overcrowd the pan.
- Remove and place on a wire strainer.
- Last but not least, serve immediately when hot and enjoy!
